Squash, Winter

Despite the name, winter squash are grown in summer, not in the winter. They‘re called winter squash because they have been bred for sweet, thick flesh and hard, protective skins that allow them to be stored and eaten all winter long. Most of them grow on long, rambling vines, often 10 feet or more. A few are more compact. To conserve garden space, vines can be trained to grow up a trellis or fence, or allowed to spread over a patio or sidewalk.

The flavor and sweetness of many winter squash improve in storage. Be careful not to damage the rind. Avoid using the stem as a handle because it can easily break off, exposing the flesh to decay.
