This free online class, taught by the UC Master Food Preservers Online Delivery Program, focuses on food safety principles and practical techniques for preserving food through dehydration.

You’ll learn how different drying approaches, including:

  • Solar drying
  • Open-air drying
  • Microwave drying
  • Forced-air drying (dehydrators)

We’ll compare how each method affects food quality, texture, and storage life. Presenters will also explain how to properly condition and store dried foods to reduce spoilage risks and extend shelf life, so you can enjoy seasonal produce year-round.
