Hey Granny!

The granny smith apple originated from Australia. It's named after Maria Ann Smith. She propagated it by chance. The apples are a crisp, little tart and have lots of fiber.

This time of year, I'm always grateful for our apple trees. We have 2 granny smith apple trees that were on the property when we bought it. I give a lot of the apples away and make many things from the ones I keep. My favorite is apple cider and I really enjoy a cold apple from the crisper on a hot day. It's very refreshing. I also make apple crisp, apple sauce and apple pancakes.

 

Mini Sized Apple Pancakes

2                  Granny Smith Apples

2 Tbl            Flour

½ Tbl          Lemon Juice

1/3 Tbl         Brown Sugar

¼ tsp            Baking Powder

½ tsp            Cinnamon

2/3 C            Greek Yogurt

1                  Egg

 

Peel and grate the apples. Add all the dry ingredients together then fold in the wet ingredients. Add a little oil in a sauté pan and cook until golden brown. Wipe out the pan after each pancake.
