Citrus fruits are tasty, nutritious and versatile. Lemons, limes, grapefruit, kumquats and others are readily available at this time of year. Winter is citrus season in California, but these zesty flavors can be safely preserved to enjoy later. On February 21, 2026, the UC Master Food Preservers of Amador County will present an informative public class, “The Zesty Kitchen”, where they will demonstrate the preservation methods of canning, freezing and dehydrating citrus fruits and also discuss home freeze-dried citrus. The presenters will share their favorite recipes for the many treats that can be made with various citrus including jelly, marmalade, candied fruits and peels, flavored salts and lemon curd. The class will also offer information on safety procedures to be used during the preparation of your fruit as well as appropriate methods for storing your finished product. A handout with recipes will be provided. If you can squeeze this class into your schedule, please register online. Walk-ins welcome.
